Sliced eggplants in sunflower oil
The eggplants in oil, seasoned with peppers, oregano, garlic, chili pepper and an addition of extra virgin olive oil, are a typical Italian recipe, particularly in the region of Campania.
They are a tasty side dish on their own or can be used as a base for delicious appetizers, but they can also be excellent in sandwiches, as a snack, or as a topping for pizza.
They also pair perfectly with meat and are exceptional on bruschetta.

Matera, The City Of The Sassi
Eggplant is grown in many regions of Italy, mainly in the south, in the regions of Puglia and Basilicata. The capital of Basilicata is the beautiful city of Matera, known as the city of the Sassi; homes that have been carved out of the rock since the Neolithic times. Some of these homes are still in use and their inhabitants have been excavateing more and more into the rock. Because of this, Matera is considered one of the oldest cities in the world.
The first settlements date back between the Palaeolithic and Neolithic periods. Many of the houses excavated in the limestone have been lived in ever since the Bronze Age. The inhabited stone neighborhood was first referred to as Sassi in a document written in 1204. Matera has been a UNESCO heritage site since 1993.
