Sweet and sour yellow pepper cream pasta

Ingredients (Serves 4):
  • 320 g. pasta
  • 2 red onions
  • 1 yellow pepper
  • 2 tomatoes
  • 100 ml. water
  • 1 tbs apple vinegar
  • 5 g. sugar
  • 2 tbs EVOO
  • 2 garlic cloves
  • Salt
  • 6 basil leaves
  • Mint leaves for decoration
Preparing:
  1. Clean the onions and cut them into wedges. Wash the pepper and cut it into squares, removing the core, the seeds and the white ribs. Wash the tomatoes, cut them into cubes after removing the seeds.
  2. Prepare a mixture of water, vinegar and sugar. In a saucepan, brown the oil with the garlic and add the peppers, sauté over high heat for a couple of minutes, then add the onions. Continue to cook for a couple of minutes, then add the water-vinegar-sugar mixture. Add a pinch of salt and cook for 10 minutes over medium heat. Turn occasionally. Add the tomatoes, the basil leaves and continue cooking for 5 minutes.
  3. Once cooked, blend with a mixer and pour back in the saucepan. Cook the pasta in a pot with boiling salted water. Just before draining it, transfer a couple of tablespoons of the cooking water to the saucepan. Drain the pasta and toss it in with the sauce.
