Spaghetti Carbonara

Ingredients (Serves 4):
  • 350 g. of spaghetti
  • 150 g. of grated pecorino romano cheese
  • 200 g. of salt pork
  • 3 eggs
  • Black pepper
  • Salt

 

Preparing:
  1. Cut the salt pork into small cubes and roast them in a pan for 3/4 minutes without adding oil.
  2. In a bowl, beat the eggs and mix them with grated pecorino. Finally, add the bacon and stir again.
  3. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally. Drain the pasta when it is “al dente”, put it in a large bowl and mix it with the sauce.
  4. Serve and sprinkle with pecorino and black pepper
