Spaghetti Carbonara
Ingredients (Serves 4):
- 350 g. of spaghetti
- 150 g. of grated pecorino romano cheese
- 200 g. of salt pork
- 3 eggs
- Black pepper
- Salt
Preparing:
- Cut the salt pork into small cubes and roast them in a pan for 3/4 minutes without adding oil.
- In a bowl, beat the eggs and mix them with grated pecorino. Finally, add the bacon and stir again.
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally. Drain the pasta when it is “al dente”, put it in a large bowl and mix it with the sauce.
- Serve and sprinkle with pecorino and black pepper
