Sicilian Pesto Salad
Ingredients:
- 1 cup couscous or quinoa
- 1 jar Fiorfiore Sicilian Pesto
- ½ cup roasted red peppers, chopped
- ½ cup feta cheese, crumbled
- 2 tbps Fiorfiore Extra Virgin Olive Oil
Instructions:
- Cook couscous or quinoa according to package instructions. Let cool slightly.
- In a large bowl, mix the cooked grains with Sicilian Pesto.
- Add roasted red peppers and feta cheese. Toss gently.
- Drizzle with olive oil and serve warm or chilled.
