Golden pasta with carrots
Ingredients (Serves 4):
- 320 g. pasta
- 1 tbs curry powder
- 1 garlic clove
- 2 carrots
- 250 g. heavy cream
- 1 tbs minced parsley
- Salt
- Black pepper
- EVOO
Preparing:
- Cook the pasta. Clean the carrots and cut them into matchsticks. Brown the garlic in 3 tablespoons of olive oil. Add the carrots, let them flavor for a few minutes. Stretch with a little water where you will have dissolved the curry. Season with salt and pepper, cook over low heat until carrots are soft.
- Add the cream to the carrot sauce and leave to flavor for 2-3 minutes on low heat.
- Add the cooked pasta, sprinkle with the parsley and stir for one more minute before serving.
