Golden pasta with carrots

Ingredients (Serves 4):
  • 320 g. pasta
  • 1 tbs curry powder
  • 1 garlic clove
  • 2 carrots
  • 250 g. heavy cream
  • 1 tbs minced parsley
  • Salt
  • Black pepper
  • EVOO
Preparing:
  1. Cook the pasta. Clean the carrots and cut them into matchsticks. Brown the garlic in 3 tablespoons of olive oil. Add the carrots, let them flavor for a few minutes. Stretch with a little water where you will have dissolved the curry. Season with salt and pepper, cook over low heat until carrots are soft.
  2. Add the cream to the carrot sauce and leave to flavor for 2-3 minutes on low heat.
  3. Add the cooked pasta, sprinkle with the parsley and stir for one more minute before serving.
