Mediterranean farfalle salad

Ingredients (Serves 4):
  • Farfalle 350 g
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 500 gr cherry tomatoes, quartered
  • Salt
  • Freshly ground black pepper
  • 1/2 cup packed fresh basil leaves torn fresh
  • Mozzarella diced 300g
Preparing:
  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally.
  2. In a large bowl pour 3 spoons of extravirgin oil, garlic and the quartered raw cherry tomatoes, salt, and pepper.
  3. Drain pasta into the bowl. Add the basil leaves and the diced mozzarella , toss and serve.
