Mediterranean farfalle salad

Ingredients (Serves 4):
  • 12 oz of Fior Fiore Farfalle
  • 3 tablespoons of olive oil
  • 2 cloves garlic minced
  • 1lb 2oz of cherry tomatoes, quartered
  • Salt
  • Freshly ground black pepper
  • 1/2 cup of packed fresh basil leaves torn fresh
  • 11 oz of Mozzarella diced
Preparing:
  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally.
  2. In a large bowl pour 3 spoons of extravirgin oil, garlic and the quartered raw cherry tomatoes, salt, and pepper.
  3. Drain pasta into the bowl. Add the basil leaves and the diced mozzarella, toss and serve.
