Pasta with ham and pea cream

Ingredients (Serves 4):
  • 320 g. pasta
  • 200 g. peas
  • 120 g. heavy cream
  • Sliced onion
  • 1 tbs (25 g.) butter
  • 2 tbs diced ham
  • 2 tbs grated Parmesan
  • EVOO
  • Salt
  • Pepper
Preparing:
  1. Heat the butter and a couple tablespoons of olive oil in a non-stick pan and brown the onion, then add the peas. Cook for about 20 minutes, then add the cream.
  2. Stir well and, at about half the cooking time, add the diced ham and a pinch of black pepper. Let the sauce stand. Cook the pasta in plenty of salted water. Drain it when al dente and pour the warm sauce.
  3. Sprinkle lavishly with grated Parmesan cheese before serving.
