Eggplant Parmesan

Ingredients:
  • 1 jar of Fiorfiore Tomato & Basil Sauce
  • 2 large eggplants, sliced
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
Instructions:
  1. Preheat the oven to 375°F. Dip eggplant slices in beaten eggs, then coat with breadcrumbs.
  2. Bake on a sheet until golden brown, about 20 minutes.
  3. Layer baked eggplant slices, Tomato & Basil Sauce, mozzarella, and Parmesan in a baking dish. Repeat layers.
  4. Bake for 30 minutes until bubbly.
