Eggplant Parmesan
Ingredients:
- 1 jar of Fiorfiore Tomato & Basil Sauce
- 2 large eggplants, sliced
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
Instructions:
- Preheat the oven to 375°F. Dip eggplant slices in beaten eggs, then coat with breadcrumbs.
- Bake on a sheet until golden brown, about 20 minutes.
- Layer baked eggplant slices, Tomato & Basil Sauce, mozzarella, and Parmesan in a baking dish. Repeat layers.
- Bake for 30 minutes until bubbly.
