Eggplant Parmesan
Ingredients:
- 1 jar of Fiorfiore Tomato & Basil Sauce
- 2 large eggplants, sliced
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
Instructions:
- Preheat the Oven: Preheat your oven to 375°F.
- Prepare the Eggplant: Dip each slice of eggplant into the beaten eggs, ensuring both sides are coated. Then, dredge the slices in breadcrumbs until fully covered.
- Bake the Eggplant: Arrange the breaded eggplant slices on a baking sheet in a single layer. Bake for about 20 minutes, flipping halfway through, until golden brown.
- Layer the Ingredients: In a baking dish, spread a thin layer of Fiorfiore Tomato & Basil Sauce. Add a layer of baked eggplant slices, followed by a layer of shredded mozzarella and a sprinkle of grated Parmesan. Repeat the layers until all ingredients are used, finishing with cheese on top.
- Bake the Dish: Bake the assembled dish for 30 minutes, or until the cheese is melted, bubbly, and golden.
- Cool and Serve: Let the Eggplant Parmesan rest for a few minutes before serving.
- Serve warm with a fresh green salad or garlic bread for a complete Italian-inspired meal!
