Pasta with cherry tomatoes and spinach
Ingredients (Serves 4):
- 320 g. pasta
- 150 g. baby spinach
- 500 g. cherry tomatoes
- Garlic
- EVOO
- Black pepper
- Salt
Preparing:
- Cook pasta in abundant boiling salted water. Meanwhile, chop the garlic and put it in a bowl with 3 spoons of oil and a minced pepper, let it infuse. Wash the cherry tomatoes and cut them in half, then wash the spinach.
- Heat three tablespoons of oil in a pan and add the cherry tomatoes, cook for a few minutes. Add the spinach and continue to cook for about 5 minutes.
- Drain the pasta and put it in the pan with the sauce, add 2 tablespoons of cooking water and add the garlic flavored oil. Season for a few seconds on high heat and serve.
