Capellini with Seafood

Ingredients:
  • 1 lb Fiorfiore Spaghetti Pasta
  • 1 lb shrimp (peeled & deveined), clams, and mussels (cleaned and open)
  • ¼ cup Fiorfiore Extra Virgin Olive Oil
  • 4 garlic cloves, minced
  • ¼ cup white wine
  • Salt and pepper to taste
  • Juice of 1 lemon
  • ¼ cup fresh parsley, chopped
Instructions:
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the Fiorfiore Spaghetti and cook according to package instructions (about 8–9 minutes) until al dente. Reserve ½ cup of the pasta water, then drain and set aside.
  2. Prepare the Seafood: Ensure the shrimp are peeled and deveined. Scrub the clams and mussels, discarding any that remain open when tapped.
  3. Sauté the Garlic: Heat 3 tbsp of Fiorfiore Extra Virgin Olive Oil in a large skillet over medium heat. Add the minced garlic and sauté for 1–2 minutes, stirring constantly, until fragrant but not browned. (Optional: Add red pepper flakes for a slight kick.)
  4. Deglaze with Wine: Pour in the white wine and let it simmer for 1–2 minutes, reducing slightly and allowing the alcohol to cook off.
  5. Cook the Clams and Mussels: Add the cleaned clams and mussels to the skillet. Cover with a lid and let them steam for 3–5 minutes, shaking the pan occasionally, until the shells open. Discard any that remain closed.
  6. Add the Shrimp: Add the shrimp to the skillet and cook uncovered for 2–3 minutes, stirring occasionally, until they turn pink and opaque.
  7. Combine Pasta and Sauce: Reduce the heat to low. Add the drained spaghetti to the skillet with the seafood mixture. Toss gently to coat the pasta in the sauce. If the sauce is too dry, add a splash of the reserved pasta water to achieve a silky consistency.
  8. Finish with Lemon and Parsley: Drizzle the remaining olive oil over the pasta. Add a squeeze of fresh lemon juice and season with salt and pepper to taste. Garnish with chopped parsley for a bright finish.
  9. Serve: Serve immediately, pairing with crusty bread and a crisp white wine for the perfect meal.
