Mediterranean farfalle salad
Ingredients (Serves 4):
- 12 oz of Fior Fiore Farfalle
- 3 tablespoons of olive oil
- 2 cloves garlic minced
- 1lb 2oz of cherry tomatoes, quartered
- Salt
- Freshly ground black pepper
- 1/2 cup of packed fresh basil leaves torn fresh
- 11 oz of Mozzarella diced
Preparing:
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally.
- In a large bowl pour 3 spoons of extravirgin oil, garlic and the quartered raw cherry tomatoes, salt, and pepper.
- Drain pasta into the bowl. Add the basil leaves and the diced mozzarella, toss and serve.
