Pumpkin, smoked bacon and goat cheese bruschetta
Ingredients (Serves 4):
- 1 jar Fior Fiore bruschetta spread with peppers
- 1 garlic clove
- 100 g. goat cheese
- 300 g. pumpkin
- 3 tbs extra virgin olive oil
- 100 g. smoked bacon
- 4 slices homemade bread
- Salt
- Pepper
- Rosemary
Preparing:
- In a saucepan, heat the oil with a clove of garlic and a sprig of chopped rosemary. Leave everything to flavour for 3 minutes, then add the diced pumpkin, season with salt and pepper and cook for 5 minutes over low heat. Add half a ladle of water, cover and cook for about 10 more minutes.
- Toast the bread for the bruschetta. Spread half a spoon of Fior Fiore bruschetta spread with peppers, then top it with the pumpkin sauce. Add the bacon, a few rosemary leaves and a slice of cheese for each slice. Heat for 3 minutes under the broiler before serving.
