Pasta with sausage and pink pepper

Ingredients (Serves 4):
  • 320 g. of pasta
  • 1/2 onion
  • 3 sweet Italian sausages
  • 200 ml. cooking cream
  • 1/2 glass of white wine
  • 2 sprigs of chopped parsley
  • 1 tablespoon of pink pepper
  • 100 g.  Grana Padano cheese
  • Salt
  • EVOO

 

Preparing:
  1. In a large pot, boil 4 liters of water. Add 2 tsp (20 g.) of salt and the pasta. Meanwhile, chop the onion and brown it in 3 tablespoons of olive oil.
  2. Add the sausages (casing removed and reduced to morsels) and continue cooking. Add the pink pepper. When the sausages are browned add the white wine and let it evaporate over low heat. Add a few tablespoons of water, cover and let cook some more.
  3. Add the cream and let it cook for a couple of minutes. Turn off the heat and add the chopped parsley. As soon as pasta is "al dente" (as soon as it no longer shows a white center when cut or bitten), drain the pasta, add it to the sauce and sprinkle with Grana Padano.
